Green power pesto and black pasta

'Pesto Soybean Pasta

I impressed myself with this one, it came out really good, and tasting just like I hoped it would. It’s black pasta made from soybeans with a fresh, homemade pesto.

The pesto was made with fresh basil, parsley, fennel (the green leafy parts), walnuts, nutritional yeast, black pepper, olive oil, lemon juice and garlic. A LOT OF GARLIC. Everything was organic and so fresh, it was like a pure green chlorophyll taste explosion! The pesto was mixed into the pasta along with chopped tomatoes.

Ok, I realize that in the photo it just looks like a slightly blurry, mushy green turd, but I’m sure you can use your imagination to get that image out of your mind, and instead imagine the delicious aromatic scents of fresh basil, fennel and garlic. Did I mention that I used A LOT OF GARLIC? This was so good I tell you, I am almost moved to cry garlicky tears of joy.
