Roasted veggies with tempeh

This was another tasty go at roasted veggies. I used broccoli, yams, fennel and tempeh.

Vegan Roasted Veggies and Tempeh

First I marinated the tempeh for about half an hour in olive oil, rice vinegar, lime juice, agave nectar, curry powder, coriander, turmeric and sambal. This was then mixed in with the veggies along with a bit more olive oil and lime, and a nice sprinkling on top of nutritional yeast. I let em go for about half an hour, mixing and coating once half way through.
