I was already a little hungry when I visited, and this photo has me running straight for the fridge. Look out! I'm a human forkpocalypse!

When I was in college and vegetarian but not yet vegan, and lived in the dorm, the cafeteria had chilaquiles out on sunday mornings. They are okay, pretty much just eggs and chips soaked in sauce. I don't think they had cheese, but maybe. I really like the vegan chilaquiles at Follow Your Heart, but these ones look like a must-try!
