Raw kale salad, edemame and baked tofu
Surely you didn’t expect me to cook in this heat?

Picked all three of these up from the deli at Whole Foods. Their raw kale salad is always good… with tomatoes, pine nuts, dried cranberries, lemon juice, olive oil, salt & pepper… and we’re in effect. The edemame salad had red onion, yellow bell pepper, sweet rice wine vinegar, green onions, seseame oil, fresh ginger & garlic and cilantro. If it wasn’t for all the onions I would have loved it. As is, just ok. The tofu had been baked in a cilantro pesto, a winning combination.

dandyna: Oh yes, it’s great raw. Probably wouldn’t be as good with the thicker, firm kind like the dinosaur Kale though… but I love it prepared this way.

I had the raw kale yesterday while we were out of state on a trip. I only got a tiny piece and was so sad I didn’t get more. Do you remember what all was in it? I know it said cider vinger and braggs aminos and garlic… any help would be great! I want to recreate it at home!

Hi Erica: My local Whole Foods makes two different kale salads, I think you are talking about the other one, not the one I had here. This one uses only kale, olive oil, lemon juice, dried cranberries, salt and pepper. Think the one you’re talking about is called the ‘emerald kale salad’ or something similar, though I’m not sure what all goes in it. I’ll try to remember to have a look for you next time I’m in there.

Thanks! The one I had was very garlicy with big pieces of kale! That’d be great if you looked for me. The closest whole foods to use is 2.5 hours away!!

I just had the emerald kale salad. the ingredients are:
kale, olive oil, sesame oil, tamari, garlic, ginger, sesame seeds

WF has another kale salad - very garlicky kale salad. It calls for nutritional yeast, aminos, cider vinegar, olive oil, garlic, and lemon juice.and possibly other substances…
