I made the Banana Flapjacks from the Vegan Brunch cookbook… first time making pancakes ever!

Vegan Banana Pancakes

They turned out delicious despite my fears of messing them up. Hopefully it wasn’t just beginners luck because now that I’ve ventured into the world of pancake making there will be no stopping me :)

    omg those look really good! i suck at making pancakes (ask scott) but you give me hope. maybe i should try this recipe…

    Those look delish! I haven’t tried that recipe yet though. I have to keep from making pancakes otherwise I eat far too many.

    Once I learned how to make my own I never went back to the boxed stuff. I never realized just how simple it was. And there’s so many different variations too. Fun!

    Lisa Marie: Yeah, that’s the danger… I can easily see myself eating nothing but pancakes from here on out :)

    Anarchy in the Garden: I was deathly afraid to use the cast iron but I faced my fear and did it anyway. It’s nicely seasoned and I sprayed it with a light coat of oil just to be safe… no sticking, look how relatively pretty they turned out!
