I was having a sudden fit of NEEDING something delicious and as close to immediate as possible. A quick survey of foodstuffs on hand didn’t offer much hope, but I realized that with what slim pickins I did have, cornbread was an option. I was able to scrape together all the ingredients for making the skillet cornbread recipe from The Veganomicon… only I don’t have a cast iron skillet so I used a normal pan. Also I didn’t have all-purpose flour so I used spelt instead. Oh, and I also added in an extra drizzle of agave nectar to the batter for good luck.

  3. Nice! I just made that the other day too. I only had half the cornmeal it called for, so I subbed in semolina for the other half. It worked great… the bread held it’s shape perfectly, even after slicing, and it wasn’t dry either.

    Oh, and you should totally invest in a cast iron pan. Not only are they good for everything, they give cornbread a seriously awesome crust on the bottom.

  6. Wow, that does look delicious! I was about to make that cornbread relatively recently, but I opened my bag of cornmeal and found dead tiny bugs instead. EWW. (And soooo not vegan!)

  7. ruby red vegan: Bugs in the cornmeal… ick! I store mine in the fridge and it holds up nicely.

  8. Kinda/sorta on topic…I found a really nice pan at Ross recently. It’s a non-stick/cast-iron hybrid, if you can believe that. It’s made by Calphalon and I love it!

    and, The Wind Attack is right… the only thing missing in this cornbread was the nice crispy edges that only a castiron skillet would have produced. Been faking it by burning it a little in my toaster :)

    I have that cookbook but am always a little intimidated by the degree of difficulty with some of the recipes. You’ve given me some motivation to dive in and try to cook something from that book.

    And nice work making something out of nothing! That’s the best: looking through the cupboard and coming up with a delicious treat without making a special trip to the store. Awesome!

  12. Weird. I just made cornbread too, but I didn’t remember Veganomicon had a recipe so I adapted one off the Alber’s cornmeal box. Meh. Yours sounds better than mine tasted, but it’s all good because we gave it all to my mom’s friends, who don’t know what good cornbread tastes like and so they loved it.

  17. sharon: Nope, I just used the regular recipe and the only change I made was not using the cast iron skillet. Having been inspired by this tasty recipe, I’ve now purchased a cast iron skillet so I can make this even better next time.
